Yader and Karen’s farm is located in a unique microclimate in one of the prime coffee cultivating regions of Jinotega. They live with their two sons, Jesús and Elvin, at such a high altitude that their coffee is harvested an entire two months after the rest of the country due to the colder climate. Because of the longer growing season, their beans have a slower maturity rate, allowing them to collect more nutrients. The result is denser, sweeter beans and more complex cupping notes (enzymatics) that include raisins, a juicy malic acidity like a red apple, sweet grapefruit and a tea-like mouth feel.
